I’m not a winter guy at all; I was born in San Rafael California, lived in Orlando, and was dragged kicking and screaming up into Connecticut as a youngster. As soon as I came to my senses I headed straight for the West Indies! Soups and rich comfort foods are some of the things that make winter tolerable for me so I feature two soups at each “Healthy Cooking Live!” winter edition event. There are 3 winter edition cooking demonstrations labeled “versions 1- 3”.
Winter Edition Version 1.0 features perhaps the most popular recipe I’ve written to date; Hamless Split Pea and the very close second most popular recipe Curry Hinted Butternut with Roasted Garlic, but there isn’t a dog in this line up at all!! The Barley Salad with Roasted Red Peppers is spectacular and I eat this Meatless Shepherd’s Pie at least a dozen times every winter!
On the Menu:
- Hamless Split Pea Soup
- Curry Hinted Butternut Soup with Roasted Garlic
- Barley Salad with Roasted Red Peppers
- Meatless Shepherd’s Pie
- Brown Rice and Lentil Pilaf
- Whole Grain Oatmeal with Dried Berries
