The first FoodCanHeal.com meat-free, oil-free, dairy-free hands-on cooking class was a great success, but it’s hard to tell who got more out of the class; the students or me!  It’s very rewarding to see people improve over the length of the class as much as this group did and I think I left more inspired and rejuvenated than they did!


We learned to sweat and even caramelized vegetables with absolutely no oil...and covered some knife skills...and learned Chef Steve's "sofrito" concept...

We even went over basic kitchen logistics like purchasing, storing, organizing, preparation, mis en place, cooling, and cleaning...and how to start cooking not just follow a recipe...plus we had a load of fun!!

We're ready to start reserving spots for the next class right now!! 

I’m taking another group of six people through three 6-hour classes on July 18th, August 1st, and August 15th...every other Sunday for six weeks.  Just as before, this class is not open to the general public, only to those that have been to at least one of my Healthy Cooking Live demonstrations and have been exposed to my story, what it is that I do, and think they can stand to be in the same room with me for six hours.


We’re going to be attacking a menu at least as large as the ones I do in the cooking demonstrations...sometimes more sometimes less depending on the group...except when you come in I won’t have all the ingredients lined up on the counter the way you’re accustomed to seeing at the start of the cooking demonstration.  Only the whole food products will be there and it will be your job to get us to the end point.  I’ll be there to assist and guide, but your team of six is doing the work!


Besides the cooking skills involved we’ll be starting with kitchen logistics by actually going through the process of efficiently scheduling kitchen production so that we can get an entire week’s worth of food cooked, cooled, and packaged in a timely manner.  As you all know by now my recipes are large enough to get a small family through a week...it’s the same amount of food I make for the buffets at the cooking demonstrations, we’ll be cooking that same amount of food – if not more – and you all will be dividing it up and taking it home to eat through the week.  We’ll also be making a full lunch and snacks for ourselves throughout the day.

We’re going to be flexible with the menu items and I’ll be taking suggestions and requests for individual items from group members and will tailor something specifically for each group.  Please don’t expect us to be following recipes, you’ve heard me talk about learning to cook as opposed to following a recipe and here is where we’re going to put that into practice with you right by my side tasting with me as we go!


I supply you with a notebook containing all the recipes we go over in class printed in color and in plastic sheet protectors so you can use them over and over in the kitchen without ruining the pages as well as an apron, two side towels, a variety of storage containers, a notepad and a pencil.


The cost for the classes is $300 plus a $100 food charge and I’ll attempt to give as much of that back in food as humanly possible and those of you that have been to my cooking demonstrations know that I’m serious about that!  PLUS you can attend the Christmas in July demonstration on Sunday July 25th and the Summer Edition v1.0 demonstration on Sunday August 8th absolutely free of charge.  That’s a $75 value right there!!
